If you live in Fort Collins you have probably visited New Belgium Brewing once or twice (a week) and most likely enjoyed a beer crafted by Lauren Salazar. Lauren is the wood cellar manager, sensory specialist, and the creator of many amazing sour beers including my all time favorite La Folie. If you have ever enjoyed a sour beer from New Belgium you have Lauren to thank for it. I enjoyed spending time with Lauren weaving in and out of the foeders. Dave's face lit up like it was Christmas with each new beer she shared from her favorite barrels. Lauren's passion for good beer shines through in the characteristics of the beers she curates.
